  • Cast Iron Cooking in the Off Grid Forest Kitchen | Corn Bread and Beans | Axe Repair

    Hard at it (not really) in the Forest Kitchen, this time I make vegetarian baked beens with corn bread, baked in the primitive earthen oven with maple and cherry wood for added flavor. It's almost vegetarian - if you look closely, you may notice a couple of pieces of leftover bear sausages thrown in there. I talk about my axe and firewood too, making a few small repairs between checking on the meal in the oven.
    In case you're seriously interested in the recipes (if you can call them recipes), here they are;

    Baked Beans
    2 cups any dried beans - soaked overnight or simmered for a couple of hours ahead of time
    1 onion
    1 can of tomatoes
    2 cups of water
    1/2 cup of maple sugar or maple syrup (NOT corn syrup)
    Random fresh vegetables
    To taste - garlic, Old Bay seasoning, pepper, hot sauce, hot peppers, salt, pepper, hot sauce...
    Simmer until beans are soft. Better the next day

    Corn Bread (I doubled this recipe) (I found this online somewhere, no recollection of when and where)

    INGREDIENTS

    * 1cup cornmeal
    * 1⁄2cup flour
    * 1teaspoon salt
    * 1teaspoon maple sugar
    * 1⁄2cup milk
    * 1⁄2cup boiling water
    * 3tablespoons cooking oil
    * 1egg
    * 1 1⁄2teaspoons baking powder

    DIRECTIONS
    * Grease an 8-inch round or square baking pan. Preheat oven to 425. Place pan in oven to preheat.
    * Combine cornmeal, flour, salt, and sugar in mixing bowl. Add corn oil and use a cutting motion with spoon so that oil will be well blended with other ingredients. Add the boiling water and mix well.
    * Add cold milk and stir. Let stand for a few minutes until batter has cooled to room temperature.
    * Mix in egg and then baking powder; beat briskly.
    * Remove preheated pan from oven and pour in batter. Bake until lightly browned (approx. 20 minutes).

    With a bunch of guys coming over this weekend, I concentrate on making the off grid log sauna functional with a wood floor, benches and a wall to keep the heat in.     With an axe and other hand tools, I bushcraft a wooden door handle for the rustic door on the off grid log cabin that is my sauna, bathhouse in the forest. For dinner, I make pizza from scratch and bake it on my DIY earthen pizza oven that I built last year from sand and clay.
    It's late spring and I finally hack out a clearing in the forest to grow fruit and vegetables, the next step in my long path to self reliance.

    With my dog, Cali the Golden Retriever, I start my forest garden, hacking a vegetable plot into the banks along a beaver creek while collecting sod and moss for the roof of a log cabin in the Canadian wilderness.

  • Making a Unique Wood Door for a Log Cabin

    Using rough cut cedar boards, ash bark and a stained glass window that my Godfather gave us for a wedding gift many years ago, I build a wood door for the front of the log cabin sauna using hand tools, traditional woodworking techniques and natural materials. This DIY door was free, costing me nothing to make. In the next log cabin episode, I install the door and handcraft a door handle out of wood and antler

  • Extreme Early Winter at the Cabin in the Woods of Canada

    Winter has hit Canada early, with frigid temperatures far below normal, snow that won't melt and lakes that are already completely ice covered, much earlier than normal - we're in for another extreme winter at my log cabin in the wilderness. My Skidoo is helps me gather enough firewood for the bathhouse and the log cabin, which is going to be helpful in the coming months as I prepare the cabin for two full time occupants. Speaking of that, I start working on the small shed addition on the back of the cabin which will house a storage area and a composting toilet so that my wife doesn't have to go outside to use the outhouse in the middle of the night all winter.
    My off grid outdoor meat locker is working fine with the cold weather, so I take out 2 lbs of ground bear to make bear soup with sourdough bread. Cali, my Golden Retriever, loves this weather and now that she's ready for cold weather, she finds the cabin too hot and spends most of her indoor time sleeping against the front door of the cabin on the cool stones.

  • Man Builds Off Grid Log Cabin Alone in the Canadian Wilderness

    One man builds a cheap, rustic log cabin in the Canadian wilderness alone and without power tools over several months in 2017.

    Finally, one video showing the entire build process from the cutting of the first tree to the laying of the last floor board - no food, no talking, no visitors, just carpentry, bushcraft, timber framing, blood, sweat and tears.
    My end goal is to have an off grid, primitive wilderness homestead, where I can practice primitive technology, bushcraft and traditional skills in an effort to become as completely self reliant as possible in this day and age.
    In late April, I cut the first balsam fir tree down on the property near Algonquin Park, Ontario, Canada. Next, from June until August, I collected all of the building materials and fabricated the cabin using saddle notches in the corners. I cleared the land in August, laid down gravel for a pad and began erecting the off grid log cabin. By September, the walls were done and I started on the roof framing in October.
    In November, I burned the roof boards with shou sugi ban, an ancient Japanese technique for preserving wood. Against convention, I installed the roof in board and batten fashion, using my roofing background to come up with techniques to keep the cabin watertight.
    Next, I moved inside where I installed a Vermont Castings wood stove on top of a limestone flagstone floor, which extended from the doorway to the center of the cabin underneath the fireplace.
    For the rest of the floor, I framed it using 2x4 and 2x6 red pine boards and then installed 2x6x10' boards, which I burned using the same shou sugi ban technique.
    Now in December, I chinked the walls with moss and clay and have been spending a lot of time in the cabin, starting rustic furniture made with materials from the surrounding forest.

  • Building a Native American Longhouse with Hand Tools | The Best Natural Bushcraft Shelter

    The ultimate natural shelter that helped native north americans survive this harsh northern climate for thousands of years is the longhouse, a bushcraft shelter made from logs, saplings and bark, lashed together with natural cordage and heated with central pit fires. Up to dozens of families would live in this primitive hut, with each family sharing a section of the longhouse, sleeping and sitting on a large bed near the ground with tools, clothing and food stored in upper shelves and hanging from the rafters.
    Episode 1:
    5 guys build the frame of this shelter on my land in one weekend using cedar logs, cedar saplings, cedar bark for cordage and ash trees for the ridge pole and for the bark siding that will cover the natural structure. Using hand tools only, we quickly assemble timber frame, post and beam structure on day one and install the curved saplings that form the walls and roof on day two.
    Over the fire in front of the oversized wigwam, we cook a huge batch of chili for lunches and on the second day, we spit roast two large turkeys on a maple tripod and spit, smoking the fowl all day over a low smokey fire.
    In the evenings, we head back to my log cabin where we cook up moose burgers and more for dinner, and a huge skillet of bacon and eggs for breakfast. Tune in later this week for the behind the scenes video of the cabin life, and check back periodically, or subscribe, to see us finish the ultimate bushcraft natural shelter and then use it to practice First Nations and European bushcraft skill, including woodworking, tool making, carving, fishing, foraging, harvesting wild game, preserving food, tanning hides and making, clothing and much more.

  • First Hot Sauna in the Forest | Off Grid Log Cabin Life

    Now that the off grid, wood fired sauna in the forest is relatively airtight and the roof is insulated with moss, it gets up to 80 degrees Celsius (176F) quickly and without too much wood, higher if I crank the wood stove and give the cedar logs of the log cabin walls time to heat up. It's time to finish the interior now, so I smoked the deer hide that was hanging on the wood shed to dry it back out and I hung it on the wall of the change room area of the bathhouse. I will be adding a sink, bench and firewood store in here as well.
    With summer winding down, I have a lot to do around the wilderness homestead but the weather and scenery is just to perfect to keep working. I am taking more time this fall to go for long hikes in the forest, exploring waterfalls, fishing, hunting and practicing archery. This is why I embarked on this life simplification and off grid, wilderness lifestyle to begin with and I need to start enjoying my freedom more.

    I use the sauna for the first time despite the gaps in the walls of the log cabin bathhouse that prevent it from getting up to the right temperature. I'll be curing that soon. The weather this week is great for working outside, but I've been busy doing a variety of spring projects so my progress on the sauna was limited to the floor in the change room and a frame for the live roof. I spend a few hours preparing my open-water fishing and camping gear for a spring fishing trip in the evening.
    I talk at the end of the video for a few minutes, explaining why I have not been doing My Self Reflections for awhile. I plan to change that.

  • Building a 1500 sq.ft off-grid cabin: Finishing the interior

    This 1500sq ft. cabin was built in the mountains and wilderness near Golden British Columbia Canada in just 56 days, with an additional 40 spent on the interior. The cabin will be off-grid and powered using a 9 KW home-made hydro generator located on the properties small creek.

    I will be releasing individual videos that take a deeper dive into each aspect covered in this summary on a more scheduled basis as to not leave you hanging for *another* 8 months.

    FULL STORY

    My Grandfather and master log worker decided he would be building one last off-grid cabin as he gets older. My brother, seizing the opportunity purchased land in the Canadian Rockies so that the three of us could embark on this huge project together.

    It began last fall with me and my grandfather arriving at a clear building site. Me being very ignorant to the arduous journey ahead. I purchased a crane, my brother purchased the logs and we were off. it took 56 full days in a row to erect the walls and roof of the cabin.

    As soon as they were built we packed up and left faster than we arrived. Canada then experienced one of the coldest winters on record with no trips taken out to the shell of the cabin until May 1st.

    Me and my brother arrived back at the cabin with an entirely new mind set, and so did my Grandfather. We got to work hard, with the valley waking up from its winter hibernation all around us. We had a resident black bear that kept us company, and a swallow that took a particular liking to me.

    Building this off-grid cabin was difficult, it was long, and it was an experience like none other. As the largest project (by far) that I have ever completed it has been a blessing and a honour to share the experience with you, and so many of you at that.

    Free hardwood flooring for the diy outdoor kitchen in the form of dead-standing ash trees is found in the forest around the cabin courtesy of the emerald ash borer. The ash trees are well seasoned and very straight so I will be making many things with them around the cabin, including a cordwood floor for the outdoor forest kitchen, planks for counters and furniture, arrows for target practice,
    dowels, tool handles and more. In Episode 15, I'll level the cordwood pieces and fill in the gaps with clay or sand.

  • DIY Cedar Shingle Roof | Off Grid Log Cabin | The Forest Kitchen

    Stay tuned to the end where I talk about self reliance, being prepared for smaller emergencies, like the attempted break-in last week, the forest fires burning west of the log cabin and the financial crisis that hit me in 2010. In this episode of the forest kitchen at the off grid log cabin, I install a cedar shingle roof on the outdoor cooking pavilion and build a gable end wall on the shelter covering the earthen oven. I also remove all of the sand and wood from inside the clay mud oven and light a candle to slowly start drying out the oven, a process that I will extend for about 2 weeks before firing it up to cook the first meal in it.
    You will notice another dog hanging around this week. My sister and her daughter visited and brought their golden retriever, Charlie. Cali, our dog, was not pleased for the first day, but eventually she welcome Charlie and they became friends before they departed.   • Screening the Porch of my Log Cabin | Smoked Black Bear Sandwiches

    I finish the log siding on the side porch, close in the gable end and install the screens in the upper sections. Life at the off grid log cabin is very peaceful, the forest filled with the sounds of nature while Cali my golden retriever spends her days chasing squirrels and swimming in the pond. In the earthen oven in the forest kitchen, I slow smoke a black bear roast, shred it and put it on fresh fried bannock with homemade mozzarella cheese, hot peppers and green tomato chutney. For breakfast, I make coffee on the rocket stove in the outdoor kitchen and simmer oatmeal with dried blueberries and maple syrup from the maple trees on my land.

    Winter is coming, and I'm preparing for it by finishing the ridge of the roof on the log cabin, processing firewood, collecting and storing building materials for the off grid sauna and log cabin and harvesting game. Cali the golden retriever loves this time of year too - cool weather and countless squirrels and chipmunks to chase.

  • Building The Loft of the Log Cabin using Hand Tools | Axe, Cherry Tree, Ostrich, Snowshoeing

    In need of building materials for the loft in the off grid log cabin and log sauna, Cali and I snowshoe through the deep snow in the forest to the grove of dead trees that burned in a lightening strike, seeking out a large black cherry tree that I have had my eye on for two years. I plan to mill it into planks and beams to renovate the sleeping loft, adding storage for clothes and more. I use an axe to cut down the tree - much more exhausting than I anticipated because the wood is seasoned and frozen. With few groceries left in the pantry, I cook an unusual meal of ground ostrich with onions, garlic, zucchini, celery and spices.

    Cali, my golden retriever, and I take a break from the log cabin to explore the forest and lakes around the outpost camp, the future location for my trappers cabin, traveling by canoe and by foot. We catch a few fish, keeping two smallmouth bass for dinner that I cook over the campfire on top of a bedrock cliff at the outpost camp.

    For over nearly 10 years I grew a fruit tree, permaculture, garden, and native edible plant, herb, and raised bed garden food forest. You can still watch all the garden videos of my old desert garden in Arizona. I was born in British Columbia and I have returned to the Rain Forests of British Columbia to a Raw Land property to grow my 1st FULL EDIBLE FOOD FOREST Off Grid on a wilderness property. This climate is temperate and coastal, rarely seeing snow in the winter and highs in the 80's (30 Celsius) in the summer. It is a rare microclimate that spans from gardening zone 7-9. The property is 8 acres and completely overgrown, mostly with conifer trees. This area is a verifiable rain forest and situated in the Southwestern-most tip of the Canadian Great Bear Rain Forest. NicHolistic ( and I will be learning about edible seaweeds, edible native plants, edible mushrooms, and many other edible native trees/plants as we attempt to Build a Yurt, Draw Our Energy Clean, Live Off the Grid, and Grow an Epic Superfoods Garden and Fruit Tree Orchard.     Someone broke into my truck and stole my expensive camera and wallet. After dealing with restoring my identity with new cards to replace everything in my wallet, an old friend and his wife visit me at my log cabin, bearing gifts. I've been spending more time away from my off grid homestead than normal, and I explain why and how that caused the theft of my camera gear. Gone is a Canon 1DX, Manfrotto tripod, Oakley sunglasses and more.
