    Hey guys! I am back with the next installment of my diet review series. This week I am covering the incredibly popular ketogenic diet. Within the last year or two, the keto diet has soared in popularity and I can understand why. It is a simple diet where counting calories isn't important (who wants to count calories) and you get to eat a bunch of really delicious foods.

    If you are curious, the name of the diet comes from the ketone bodies produced within your body as a result of switching your body to fuel itself through fats instead of carbs. This is also referred to as a state of ketosis.

    I know many of you want to lose weight and there are tons of videos on weight loss out there. But I want to give you an honest doctor's take on the keto diet, which is essentially a high fat low carb diet. Its claim to fame is that helps to burn body fat for energy, therefore helping you lose weight quickly. But is fast weight loss even healthy? + Is this the best weight loss diet?

    Anyway, I could go into more detail covering the smallest intricacies of the diet but I did not want to weigh down the video, both literally and figuratively. Please let me know if this is too little, too much, or just the right amount of information about intermittent fasting.

    Also, I want you to remember that diets are not all about weight loss but more importantly about eating healthy. So let's get started with the Keto diet explained / Ketogenic diet explained diet review!

    ULTIMATE CREAMY NUT BUTTER BANANA PORRIDGE (Serves 2)
    1 cup oats
    3 cups water
    Pinch salt
    1 cup plant milk:
    Pinch coconut sugar:
    1/4 tsp cinnamon
    3 small bananas (1 1/2 per serving)
    Handful flaked almonds
    2 tbsp almond butter:
    2 tbsp maple syrup:

    Add the boiling water and a pinch of salt to a pan on a medium heat, add in the oats a quarter at a time, reduce the heat, stir and leave to cook for 20 minutes. Once the oats are cooked through, add in the milk, mashed banana and cinnamon, and continue to stir for 5 minutes. In a separate frying pan, add the nuts and 1 tbsp of maple syrup and toast until caramelised, add the sliced banana, stir and serve on top of the porridge. Mix the other tbsp of maple syrup with the almond butter and drizzle on top.


    TOMATO, WHITE BEAN & BASIL SOUP (Serves 4, freezeable)
    2 tbsp oil
    1 white onion, chopped
    3 cloves garlic, minced
    1 red pepper
    1 tsp paprika
    1 tsp mixed herbs
    1 tin tomatoes
    1 can cannellini beans (or any white bean), rinsed & drained:
    1 veg stock cube + 500ml water
    Salt & pepper
    Bunch fresh basil
    Rye bread and pesto

    Add the oil to the pan followed by the onion and garlic, then sweat those off until soft. Add in the red pepper and cook that off for a couple of minutes before adding in the paprika, dried herbs and tomato puree. Fry the herbs and puree off in the pan for a couple of minutes then add in the tinned tomatoes, beans and vegetable stock, then season with salt and black pepper. Bring the soup to a gentle boil, then reduce the heat and continue to cook with the lid on, for 25 minutes. After 25 minutes, add in the fresh herbs then transfer to a blender or hand-blend the soup until smooth.

    LENTIL TIKKA MASALA (Serves 4, freezable)
    1-2 tbsp oil
    Tikka Masala paste:
    1 carrot, peeled & chopped
    1 red pepper, chopped
    1 can tomatoes
    1 can coconut milk or powder:
    1 cup red lentils, rinsed & drained
    Salt & pepper
    Fresh coriander to garnish

    Brown rice

    SIDE SALAD
    Handful cherry plum tomatoes, halved
    1/4 cucumber, chopped
    1 red onion, sliced thinly
    Juice and zest of 1/2 lime
    1 tbsp olive oil
    1 tbsp red wine vinegar
    Bunch fresh mint
    1/2 tsp ground cumin
    Salt & pepper

    Add the oil to a large pan followed by the Tikka Masala curry paste. Fry in the oil until heated through. Add the carrot and red pepper to the pan with the curry paste.Fry the vegetables off in the pan for around 10 minutes until they cook down and soften, and are well coated in the curry paste. Next, add the chopped tomatoes, coconut milk and the red lentils then seasoned it with salt and pepper. Stir well, then increase the heat to bring it to a gentle simmer and leave to cook for around 25 minutes until the lentils are tender. Meanwhile, make the salad by combining all the ingredients together well in a bowl. At this point the lentils should be cooked through and the sauce reduced and thickened slightly. Serve with brown rice and the salad.

    Mix the kidney beans, chopped tomato, onion, coriander, salt and pepper together in a bowl. Spread the hummus on the toast and add the Bean Salsa on top.


    LUNCH - Creamy Corn Chowder (Serves 2):
    1 tbsp oil
    1 white onion, chopped
    1 stick celery, diced
    1 red pepper, diced
    1 tsp paprika
    1 tsp smoked paprika
    1/2 tsp dried chilli flakes
    3 cups frozen sweetcorn
    2 cups vegetable stock
    1 can coconut milk
    Salt & pepper
    Coriander, lime

    Add the oil to a large pan on a medium heat. Add the onion to the pan and cook it down until soft. Next, add in the celery and red pepper along with the regular paprika, smoked paprika and chilli flakes. Give everything a good stir through and continue to cook it off until the vegetables are soft. Next, add in the frozen sweetcorn (frozen works best for this) followed by the vegetable stock and coconut milk, season with salt and black pepper. Stir well, bring it up to a gentle boil and then leave it to simmer on a low-medium heat for around 20 minutes. After 20 minutes, turn off the heat and transfer half into a blender using a ladle. Blend that up on a high speed until smooth, place the pan back on the hot and turn the heat back on, then pour the blended mixture to the other half in the pan. Stir and continue to cook it for around another 10 minutes. Serve with more red chilli flakes, torn fresh coriander and a wedge of lime.


    Clif Chocolate Almond Fudge:


    DINNER - Fried Rice, Chickpea & Kale Salad (Serves 2)
    3 tbsp Cocofina Coconut Amino
    1 tbsp sesame oil
    1 tbsp rice vinegar
    Large handful kale, washed and stems removed
    1 can chickpeas
    4 tbsp (vegan) Thai Red Curry Paste
    1 1/2 cups brown basmati & wild rice mix (or any rice)
    2 tbsp sesame oil
    1 white onion, chopped
    2 cloves garlic, minced
    Spring onion, peanuts, coriander, lime

    Start by adding the coconut amino, sesame oil and rice vinegar to a large bowl, then whisked them together. Next, add in the kale and massage the dressing into it then set it aside. Preheat the oven to 180 degrees celsius, then in a baking dish, place the rinsed, drained chickpeas and to that add the Thai red curry paste, then turn it through well to coat the chickpeas before placing it in the oven to roast for 30 minutes, shuffling halfway through. In a medium pan, cook the rice until slightly underdone, then drain it off and set it aside in a bowl. Place the empty pan back on the heat again and add in a tablespoon of sesame oil. Once it’s hot, add in the onion followed by the garlic, and cook those off until soft. Once done, add it into the bowl with the rice and then just turn it all through well. Back in the pan, add another tablespoon of sesame oil and turn the heat up high, then add the rice mixture back into the hot oil and fry it until it begins to go slightly golden and crispy (this works a lot better if you have a skillet or if it’s done in a wok). Add the fried rice to the bowl with the marinated kale, then remove the chickpeas from the oven and add those to the bowl too. Season well with salt and black pepper, then turn it over a few times. Serve with some chopped spring onion over the top, as well as some chopped peanuts, some fresh coriander and lime wedges.

    ** for those wondering if Aperol Spritz is vegan... of course it is!

    FEATURED IN THIS EPISODE:
    Spritz! in Cefalu town square
    somewhere in Palermo (name unknown!?!) - vegan pistachio and chocolate gelato
    Vino & Pomodoro (Palermo) - vegan carbonara, farfalle and seitan, vegetarian pizza (which was vegan!)
    More gas station croissants in Naples (while driving to Rome)
    Tacos & Beer (Rome) - chips with guac and salsa. There are 3 vegan tacos available here that are AMAZING! The Loco Vegano, Pavo Real (avocado tartar), and Nopalito (with cactus).
    iVegan (Rome) - vegan grocery store that's THE BEST! So much vegan cheese. Stay tuned for a future vlog of the haul we bought as well as reviews on @hotforfood instastories
    Madre Terra (Rome) - an all vegan restaurant with some raw options. We had the avocado tartar, a white pizza with cashew cheese, and a fried artichoke dish. We thought the food was ok. The tartar was actually amazing, the pizza not so much. Maybe we just ordered wrong? It's a cute place though and worth going if you're near by but it's a little outside the Rome centre so it's not worth a long travel I don't think.
    Pergamino (Rome) - this is right near the vatican museum and it's awesome. The nitro coffee was the best coffee we had the whole trip and the vegan coffee cake was delicious!
    Bere Artisinale & Trapizzino - they're next door to each other and right beside the coffee place so if you're visiting Vatican Museum go to all of these places. One before and one after. The craft beer and vegan pizza cones were a great snack!
    We taste tested a Vegan Penne frozen meal from the grocery store
    Flower Burger - pepper seitan burger with fries, quinoa cheesy burger with fries, and flower cream. The cheesy burger was the best, the tartar dipping sauce was bomb, and the flower cream is to die for... definitely check this place out!

    The recent What the Health Netflix Documentary put out some interesting information, and we decided to take a deeper dive on the subject.

    Toni Okamato from Plant Based on a Budget was featured in What The Health. She joins me today as we discuss 5 Things You Need to Know about What The Health.

    THE ROLE FOOD PLAYS IN OUR HEALTH.
    Pay attention to what you are eating and the role food plays in your overall health. The power of fruits and veggies to reverse some illnesses, help lose weight, lowers your blood sugar. We all heard as kids eat your fruits and veggies and nobody else said stop eating all those healthy foods.

    EDUCATION AND PREVENTION
    Would like to see more attention on the prevention of illnesses. We know we can’t prevent everything out there, but investing more dollars in prevention and educating people about the cause will go a long way. Medications can help manage illnesses, but may not make it go away.

    PROGRESS OVER PERFECTION
    It’s up to the person watching the documentary to make not only changes, but changes that are sustainable. Don’t worry about being perfect, but learning as you go and making progress. Rethink how we eat and opt for healthier options. I’m Italian, so people often ask don’t you miss cheese, pasta, pizza. My response is that I still have enjoy all those things. Delicious cheese made out of cashews that I can make at home, pasta with a tomatoes and veggies or even meatballs made out of quinoa. Even pizza without the cheese but lots of veggies. You’ll find that health buds change over time and you crave more of these healthier foods as you start transitioning away from the meats and cheeses.

    PLACES YOU CAN GO FOR INFORMATION
    The connection between large corporations and the agencies that many people go for health and the possible conflict of interest that may be present. They talk about companies such a McDonald's, Pizza Hut, KFC that are sponsoring these agencies to help people live healthier. That is important to be aware of. With so much information out there online, where can people go for accurate information.

    STUDIES AND EDUCATING YOURSELF
    I would like to see even more studies done to support the information presented in the video. Its also up to each person to educate themselves and make an investment in their own health.

  • How I Eat In a Day...High Starch Low Fat Vegan

    Hello beautiful souls!! In this video I share with you all my plant based meals and snacks for the day as well as the recipes. Im also taking the time to answer your questions about my skincare routine as well as my tips for continuing weight loss.
    You can find me on Instagram @plantifulkiki and on fb: @plantifulkikipage for more food and lifestyle inspo. Make sure to check me out on instagram or on my facebook page because I do share lots of recipes that I dont have videos for!

    White Bean, Potato and kale soup:
    1 onion diced
    2-3 cloves garlic minced
    3-4 meduim potatoes diced
    2-3 cans white kidney beans drained and rinsed
    1 Bunch chopped kale
    2- 32 oz boxes low sodium fat free vegetable broth
    1 cup soy milk
    2 tsp garlic powder
    salt and pepper to taste
    water saute onions and garlic then add the potatoes and vege broth and boil until potatoes are soft. Add beans and blend slightly to make creamy but still have chunks of potatoes and beans. add 1 cup milk, bring back to boil and add kale, turn heat down and let kale wilt for a few minutes then add seasonings.

    Rosemary Garlic Focaccia:
    2 1/4 cups flour (I use a white whole wheat)
    1 heaping tbsp active or rapid rise yeast
    2 tsp garlic powder
    1/4 tsp salt
    2 tbsp fresh chopped rosemary or 1 tbsp dried
    1 cup water
    combine all ingredients slowly adding the water, let knead for 10 minutes.....dough will be very sticky....place on nonstick baking sheet (on parchment paper or silicone pad), lightly pile up into a ball or mound. Let rise in warm place for 30-40 minutes, then bake at 425 for 10-15 minutes.

    Creamy salad Dressing :
    3 tbsp oil free hummus
    1 tbsp mustard of choice (i love horseraddish mustard)
    pinch of powdered garlic
    lemon juice and water to thin or lemon balsamic vinegar
    if using lemon juice and water to thin then sweeten with maple syrup or stevia and dress a salad with greens, onions, cucumbers, grapes, and chickpeas.

    Maraschino Cherry Oatmeal:
    oats
    1 banana
    frozen cherries chopped
    almond extract
    cinnamon
    cook your oatmeal with the banana chopped in it to sweeten your oats, then add the rest of the ingredients to your taste and enjoy!

    Carbs are up to 600g x day, sounds crazy right? Well here are the news: Carb do not make you fat on vegan lifestyle.
    I've increased my calories from 2500 to 2800, I want to put some weight on, man let me tell you is not easy at all to eat all this quantity of food ???? I am struggling a bit to hit the numbers, a few days I found myself hitting only 2500 cals.

    You know this lifestyle it works perfect for people who has suffered or suffer eating disorders. High carb vegan diet allows you to eat unlimited carbs unlimited calories without putting on way if done properly. So it gives your mind a freedom of worries and guilt ????

    In my country we eat meat practically in every meal and I would have ever thought to go vegan and here I am after 2 years ????
    Give it a go and see how amazing this lifestyle is, you might need to try for more than just few days, you need to allow your body time for the change.
    I believe at least 2 weeks. The first week your tummy will feel very uncomfortable cuz the high fiber intake, but then it will asest and then the great feeling will start ???????? The secret is to keep the fat intake low.

    Thanksgiving Stuffed Seitan Recipe:

    What's in the Mango Chia Seed Pudding?

    2 tablespoons white chia seeds
    1/2 cup apple spice tea
    1 tablespoon coconut cream
    1 tablespoon maple syrup
    a small pinch cardamom (fine ground)
    1/3 teaspoon cinnamon
    1/2 cup mango chunks.

    Combine everything and let it set for 4 hours or overnight.

    RECIPES -
    Days 1-3
    Berries & Coconut Oatmeal (3 servings)
    3 cups oats
    3 cups berries
    3 tbsp coconut
    3 cups plant milk

    Put all of your ingredients into jar and fill with plant milk.
    When ready to eat microwave for 2 minutes with lid off.

    Zucchini noodles salad (3 servings)
    1 package of tofu pressed and chopped
    1 zucchini julienned
    1 cucumber
    1 carrot julienned
    1/4 cup cilantro
    1 green onion chopped

    Dressing
    1/2 cup almond butter (can sub peanut)
    1 tbsp apple cider vinegar
    3 tbsp low sodium Tamari or coconut aminos
    3 tbsp maple syrup
    Juice 1 lime
    1 tsp garlic powder
    1 tsp ginger powder
    1 tbsp sesame seeds
    1/4 cup water

    Put all dressing ingredients into a bowl and add water slowly to get the consistency you want. Whisk together.


    Rice and potato curry (3 servings)
    3 cups cooked rice white or brown

    4 red potatoes diced
    1 cup red lentils
    1 cup coconut milk
    1.5 cups water
    1 carrot chopped
    1 tbsp curry powder
    1 tsp garlic powder

    Place everything in a saucepan on your stove bring to a boil, cover and reduce heat to a simmer. In the instant pot place everything in your pot and cook for 15 minutes natural release.


    Days 4&5
    Chocolate Strawberry Smoothies ( 2 servings)
    6 frozen bananas
    4 tbsp raw cashews
    2 tbsp cacao powder
    2 cups strawberries

    Break bananas into chunks and place 3 each in a 32oz mason jar, add the rest of your ingredients and freeze. When ready to eat fill jar with water and pour into blender. Blend on high until smooth and creamy.

    Waldorf salad (2 servings)
    6 cups mixed greens
    1 Apple chopped
    4 tbsp walnuts
    1 stalk celery chopped
    1/4 onion chopped

    Dressing
    1/4 cup tahini
    2 tbsp balsamic vinegar
    2 tbsp maple syrup
    1/4 cup water (add as needed)

    Place all dressing ingredients in a bowl and whisk together, slowly add water as needed.

    Sushi bowls (2 servings)
    4 cups cooked rice
    2 tbsp coconut aminos
    1 avocado
    1 carrot julienned
    1 cucumber julienned
    2 nori sheets cut up
    2 tbsp sesame seeds

    ✯Whole grain cereal with almond/soy/coconut milk and fruit
    ✯Sweet potato hash browns and avocado toast

    Non-Vegan:
    ✯Eggs (whites will give you less fat), turkey bacon and veggies
    ✯Protein Pancakes (use protein powder in with your pancake mix)

    Hey guys, here's a What I Eat type of video, and yes this is how much I eat in a day. I do train 4-5 times a week, and ride my bike for transportation as much as I can, so that means I need to eat enough calories to have energy to live my active life! I hope you enjoyed this video and watching what a label-free vegan eats in a day. Although I prefer the health benefits of eating high carb/raw, I feel like mental health and eating what you desire and not stressing over food is equally important! Enjoy your vegan ice-cream and get your greens in too ;)

  • WHAT I EAT IN A DAY #43 | VEGAN

    BREAKFAST: GREEN SMOOTHIE BOWL
    - 2-3 ripe bananas
    - 1 whole pineapple
    - 2 kiwifruit
    - 5 dates
    - 1 sachet green powder + I also added in 2 tsp spirulina
    - 1 cup coconut water (I use cocobella, tastes the best to me)
    BLEND UNTIL SMOOTH! Topped mine with banana, strawberries, buckwheat, almonds, coconut flakes & alter eco chocolate.

    LUNCH: SUSHI
    - 2 nori sheets
    - 4-5 cups rice
    - 2 tbsp Rice vinegar
    - 1 tbsp sweetener of your choice
    - 1 cucumber, thinly sliced lengthways
    - 1 carrot, peeled and thinly sliced lengthways
    - 1 avocado, thinly sliced
    - 1/4 packet extra firm tofu (the one I'm using is a chinese five spice one that I marinated in a bit of soy sauce)
    - 1 tbsp sesame seeds
    Method:
    1) In a large plate, add rice. Add in rice vinegar & sweetener to taste (you can use maple syrup, agave... etc) and fold through evenly
    2) Place nori sheet shiny side down on a sushi mat
    3) Add on rice, gently push down onto nori sheet, leaving a 2cm gap on the furthest end of the nori sheet (away from you)
    4) Place all your fillings in the middle of where the rice is (i.e. ignore the gap and find the centre of the rice covered part)
    5) Holding onto the fillings, roll the mat over and ensure that your end (the one closest to you) just reaches the further end where the rice ends (idk if this makes sense but you'll see in the video)
    6) Dab some water onto the 2cm gap at the end before continuing to roll it, sealing the ends
    7) Repeat with another roll or with another however many rolls and enjoy!!! Remember when slicing your rolls, make sure you're using a sharp knife and you should try clean your knife/dampen it with a little bit of water in between to avoid it from sticking and ruining the cut

    DINNER: Went to Loving Hut @ Cabramatta (ALL VEGAN)
    Dishes we ate:
    - 'Duck' noodle soup
    - Red rice and 'chicken'
    - Eggplant in clay pot
    - Stirfry combination yellow noodles
    - Tub of rice

    I made this MEAL PLAN to help anyone who is interested in veganism or who simply wants to eat less animals or eat more sustainable. When I used to eat animal products I would follow advice from fitness magazines and stick to restrictive and boring meal plans. I felt really crappy and was getting sick very frequently,.     Every time we go buy groceries, eat at restaurants or prepare our meals, we have a choice of what products we support and eat. Our food choices are very important, not just for our health and well being, but also the sustainability of our planet.

    DAY 1
    - Breakfast: Cereal + Fruit (2:34)
    - Use any vegan cereal of your choice
    - Non Dairy Milk
    - Sliced Strawberry or Banana
    - 1 Tbsp grounded Flax, Chia, or Hemp Seeds (or Wheat germ)
    - Serve with a side of Grapefruit (or Fruit of choice)
    - Lunch : Chickpea “Tuna Sandwich” + Fruit or Chickpea Salad (3:56)
    - For Chickpea Mix:
    - 1 can (15oz) drained+ rinsed Chickpeas
    - 1 Avocado
    - Juice of 1/2 Lemon, to taste
    - 1/4 cup each : grated carrots, red onion, cilantro, celery
    - Salt + Pepper to taste
    - For Sandwich:
    - 2 slices of vegan bread (using Nature’s Own Wheat Bread)
    - Chickpea Mix
    - Sliced Cucumber
    - Romaine Lettuce
    - For Salad:
    - Field Greens
    - Chickpea Mix
    - Cherry Tomatoes
    - Sunflower Seeds
    - Dressing of Choice or Lemon
    - Dinner: Sweet Potato LENTILS (6:50)

    Day 2
    - Breakfast: Green Smoothie (7:04 )
    - 3 Ripe Bananas
    - 1-2 cups Frozen Mango
    - 2-3 cups Spinach
    - 2 cups Flax Milk
    - 1-2 cups Water
    - Cinnamon
    - 2-3 Dates
    - Lunch: Grilled Veggie Wrap (8:39)
    - Homemade Hummus:
    - 2 - 15oz cans Chickpeas (drained + rinsed)
    - 2 Tbsp. minced garlic
    - Juice of 1/2 a lemon, to taste
    - 2 tsp (or more ) Garlic Coconut Aminos (sub for Soy sauce)
    - 1-2 tsp Cumin
    - Himalayan Salt, to taste
    - 1/2 cup water to blend
    - Zucchini Wraps:
    - 1 Zucchini, sliced
    - Mushrooms, sweet mini peppers, red onion, kalamata olives, Field greens
    - Brown Rice Tortilla
    - Vegan Honey Mustard Dip:
    - Mustard, Agave, & Lemon Juice
    - Dinner: Stuffed Bell Peppers (10:58)

    Day 3
    - Breakfast: Oatmeal + Fruit (11:10)
    - 1 cup Old Fashioned Oats
    - 1 cup non dairy Milk + water to thin out
    - cinnamon + agave
    - Frozen mangos + Blueberries
    - Optional : Hemp Seeds, Ground Flax, Raisins
    - Lunch: Lettuce Wraps or Spring Rolls (11:54)

    - Dinner: Sweet Potato Buddha Bowls (12:21)
    - 3 washed Sweet Potatoes (Baked at 400 degrees)
    - Avocado Oil Spray to Roast (optional)
    - 1/4 Red Onion
    - 1 can (15oz) Chickpeas, drained +rinsed
    - Broccoli + Zucchini
    - Salt + Pepper
    - Field Greens (for the Bowl)
    - Tahini Dressing:
    - 2 Tbsp Tahini
    - 1 Tbsp Agave or Maple Syrup
    - Juice of 1/2 Lemon, to taste
    - Hot water to thin out the sauce
    * Adjust to taste
    - To season ChickPeas:
    - 1-2 tsp. Cumin
    - 3/4 tsp. Chili powder
    - 3/4 tsp. Garlic powder
    - 1/4 tsp salt + 1/4 tsp pepper
    - Optional :Oregano + Onion powder
