    The trick to get crusty and crispy French fries is double-frying them.

    Ingredients
    Potatoes – 4 (700 grams)
    Salt – 1 tsp (as per taste)
    Oil – for frying
    Chaat masala – as per taste

    Getting ready:

    1.Rinse the potatoes and peel them.
    2.Keep the potatoes drenched in water to prevent them from turning black.

    Making:

    3.Now with help of a knife or fries cutter cut down the potatoes and again drench them in water.
    4.In case, you don’t have fries then cut the potatoes using a knife. For this slice down the potatoes thinly first and further divide them in long French fries.
    5.Take a vessel and heat some water along with salt in it.
    6.When you see gentle boil in the water, drop all the French fries into it.
    7.Keep the flame high and let them simmer for 5 minutes until they get soft.
    8.After 5 minutes, turn off the flame and drain them out in a sieve placed above a bowl.
    9.Now pat dry these French fries with a clean cloth and then place them in freezer for 1 hour so that they cool down.
    10.Heat enough oil in a wok or pan to deep fry the fries.
    11.Take out the fries from freezer and drop French fries into it. Place as many French fries as possible at one time.
    12.Fry the French fries until they get little brown in color.
    13.Drain out these fries on a plate and likewise fry the rest as well. Place these fries under fan for 15 to 20 minutes so that they cool down.
    14.After this, again fry the French fries until crispy. Drop the French fries again hot oil and fry until they get golden brown and crispy.
    15.Drain out the fried French fries on a sieve kept above a bowl or on absorbent paper to remove excess oil. Crispy and mouth drooling French fries are ready.
    16.Transfer these fries on a plate or serving bowl.

    Serving:

    17.Sprinkle some chaat on these fried French fries.
    18.Serve these tangy-zingy steaming hot French fries with tomato ketchup or any other chutney you relish eating.

    Suggestion:

    Keep the flame medium while frying the French fries at first so that they are cooked through. Then fry the fries again on high flame in hot oil till golden brown and crispy.
    You can half cook the French fries and then store them in any container. Place the container in freezer. Whenever you wish to have the fries, take them out 1 hour prior cooking and then fry till crispy and golden brown.

    Soya momos are a great substitute for any meat momos and tastes equally delectable. Learn how to make soya momos along with the popular momos chutney!

    SOYA MOMOS

    Ingredients

    1 cup soya granules, soaked in warm water and drained
    1 cup refined flour (maida)
    ½ tsp oil
    3-4 spring onion bulbs, finely chopped
    1 small carrot, finely chopped
    1 tsp finely chopped ginger
    1 tsp finely chopped lemon grass
    Salt to taste
    Crushed black peppercorns to taste
    1 tsp soy sauce
    Chutney
    10-12 dried red chillies
    1 tbsp vinegar
    4 medium tomatoes
    2 tsps oil + for greasing
    1½ tbsps finely chopped garlic
    Salt to taste
    1 tsp castor sugar
    Crushed black peppercorns to taste
    1 tsp Tata Sampann Chilli Powder

    Method

    1. For the dough, add refined flour in a large bowl. Add ¼ cup water and knead to a semi-stiff dough. Cover with a damp muslin cloth and rest for 30 minutes.
    2. For the filling, heat oil in a non-stick wok. Add spring onion bulbs sauté till translucent.
    3. Add carrot and mix well, cook for 1 minute. Add ginger, lemon grass and sauté for 30 seconds.
    4. Add soya granules and salt, crushed black peppercorns and mix well. Add soy sauce and mix, cook for 2 minutes. Transfer into a bowl and allow to cool to room temperature.
    5. Boil sufficient water in the same wok. Add red chillies and vinegar.
    6. Discard the eye of the tomatoes and cut them in half and add them in the boiling water. Cook for 3-5 minutes on high heat.
    7. Remove the chillies and tomatoes from the pan and transfer them into a bowl. Allow to cool slightly.
    8. Transfer the chillies and tomatoes in a blender jar and blend till smooth.
    9. For the chutney, heat oil in a non-stick pan. Add garlic and sauté for a few seconds.
    10. Add the ground mixture and mix well. Add salt and mix, add castor sugar, crushed black peppercorns and mix well.
    11. Add Tata Sampann Chilli Powder and mix well. Cook for a minute. Take the pan off the heat.
    12. Heat sufficient water in a steamer.
    13. Punch the dough and slightly knead. Take a small portion of the dough and shape it into a ball. Dust the worktop with flour and knead to a small disc.
    14. Place a portion of the stuffing in the center of the disc and apply water on the edges and shape into a momo.
    15. Grease the steamer basket with oil and place the momos on them and steam for 10-15 minutes. Take them out and transfer them on a serving plate.
    16. Serve hot with the prepared chutney.

Today I am sharing my very different recipe of Maggi Pakoda of Indian Style. This recipe is so Quick & Easy to make and the taste is awesome. This recipe is super tasty & delicious and irresistible.

    3 Min. Maggi Pakoda Recipe In Hindi मैग्गी पकोड़ा Indian Style Pakora | Quick & Easy Pakoda Recipe

    Ingrdients :-
    1 packet Maggi,
    1 cup Chopped Cabbage, Onion, Capsicum
    ½ cup Coriander
    2 tbsp Suji( Rawa)
    2 tbsp Besan( Gram Flour),
    1 ½ tbsp Red Chilli Powder
    Salt to Taste
    Water as required.
    Procedure :-
    Prepare Maggi Noodles as shown to you on packet. Cook it with less water and cook it till 80% only. After preparing Maggi Noodles cool it completely. Then add chopped Cabbage, Capsicum, Onion, Coriander, Red Chili Powder, Suji (Rawa), Besan according to shown in video. Mix all ingredients well and if required add water in it. Make sure your Maggi Pakora better should not be runny. Fry this pakoda in hot oil and till it becomes crispy. Serve hot with tomato sauce.

    Cauliflower Floret (फूलगोभी ) - 300 gms
    Tomatoes (टमाटर ) - 2 (200 gms )
    Ginger (अदरक ) - 1/2 Inch piece
    Green Chilies (हरी मिर्च ) - 2
    Oil (तेल ) - 2 to 3 tbsp
    Green Coriander (हरा धनिया ) - 2 to 3 tbsp ( finely chopped)
    Cumin seeds (जीरा ) - 1/2 tsp
    Asafoetida (हिंग ) - 1/2 pinch
    Turmeric powder (हल्दी पाउडर ) - 1/2 tsp
    Coriander powder (धनिया पाउडर ) - 1 tsp

    How to make Party style Aloo Gobhi

    1. Take peeled potato, kept in water. Cut into pieces. Wash cauliflower florets as well.
    2. Turn on flame, heat a pan, add cumin seeds and slightly roast. Add potatoes, cauliflower stir.
    3. Add tsp salt, turmeric powder. Stir the spices and roast the sabzi for 2 minutes.
    4. Cover and cook it for 5 minutes then stir it. Keep flame minimum.
    5. To prepare masala, heat wok, put 2 tbsp oil in wok to heat. When hot add cumin seeds, asafoetida, bay leaves, cinnamon stick, cloves and black pepper. Roast these.
    6. Add tomato- green chili - ginger paste to masala. Add red chili powder, coriander powder. Roast the spices, till oil separates from it.
    7. After 5 minutes, stir the sabzi. Then cover and cook for few minutes on low flame. Meanwhile Masala is roasted, stir at regular intervals.
    8. Check the sabzi. It is cooked for 20 minutes. Masala is cooked too, add water to it. Add salt, ginger juliennes, garam masala some green coriander and mix it.
    9. Masala is boiled, Pour the masala and mix with the sabzi, cook for 4 to 5 minutes.
    Serving :

    10. Sumptuous Party style Gobhi Aloo Sabzi is ready.Take out the sabzi in a bowl and relish with your meal.

    INGREDIENTS:
    FOR FILLING:
    * Cabbage (पत्ता गोभी) - some
    * Carrot (गाजर) - some
    * Spring onion (हरा प्याज) - some
    * Capsicum (शिमला मिर्च) - some
    * Ginger (अदरक) - some
    * Garlic (लहसुन) - some
    * Green chili (हरी मिर्च)
    * Cottage cheese (पनीर)
    * Salt (नमक) - 1/2 tsp
    * Black pepper (काली मिर्च पाउडर) - some
    * Sugar (चीनी) - 1/2 tsp
    * Oil (तेल) - 1 tsp

    FOR COVERING:
    * All-purpose flour (मैदा) - 1 cup
    * Salt (नमक) - some
    * Water (पानी) - Ice Cold

    FOR RED CHUTNEY:
    * Dry Kashmiri Red Chili (कश्मीरी लाल मिर्च) - 4-5
    * Dry red chili (सूखी लाल मिर्च) - 4-5
    * Tomatoes (टमाटर) - 3
    * Garlic (लहसुन) - 8-10
    * Oil (तेल) - 2 tsp
    * Chili powder (मिर्च पाउडर) - some
    * Salt (नमक) - as per taste
    * Sugar (चीनी) - some
    * Ajinomoto salt (अजीनोमोटो) - some (optional)
    * Maggi Masala (मैगी मसाला) - 1 sachet

    FOR MAYONNAISE:
    * Milk (दूध) - 2-2.5 tbsp
    * Potato (आलू) - 1 boiled
    * Salt (नमक) - some
    * Sugar (चीनी) - some
    * Ajinomoto salt (अजीनोमोटो) - some
    * Milk Cream (मलाई/क्रीम) - 2 tbsp

    RECIPE:

    For Momo Covering, take some sieved All-Purpose Flour, put some salt in it and bind it tightly by adding some Ice Cold Water in it gradually. Then cover it with a clean wrap and keep the dough in the fridge for some time.
    For Momos Red Chutney, take some Whole Kashmiri Red Chilies and soak them in water for 1-2 hours. Take a mixer jar, put the soaked Kashmiri Red Chilies, chopped Tomatoes and some Garlic in it, and grind them.
    Take a pan, put some Oil, Kashmiri Red Chili Powder, and the red paste in it by filtering it with a strainer. Then put some Water, Salt, Sugar, Ajinomoto Powder, and some Maggi Masala in it and cook it on slow flame. In this way, Red Spicy Momos Chutney will get ready.
    For Mayonnaise, take a mixer jar, put some Milk, Boiled Potatoes, Salt, Sugar, Ajinomoto Powder, and Fresh Milk Cream in it and churn it. In this way, very Tasty and Creamy Street Style Mayonnaise will get ready.
    For Filling, take a bowl, put some finely chopped Cabbage, grated Carrot, chopped Spring Onion, Capsicum, Ginger, Garlic, Green Chilies, Salt, Sugar, Black Pepper Powder and some Oil in it. Mix them all then cover it and keep it aside for 10-15 mins.
    Then put the filling in a cotton cloth and squeeze it and take out the excess water from it.
    For Momos, make some small dough balls and roll them thinly. Then put the filling in the center and fold it and give it shape. In this way, make ready all the Momos. You can also add grated Cottage Cheese in the filling and make Paneer (Cottage Cheese) Momos also.
    In a pan, put some Water for boiling, keep a strainer plate on it and grease it with Oil. Put the ready Momos on the plate then cover it and give them steam for 12-15 mins.
    Then serve the Street Style Veg Momos with homemade Creamy Mayonnaise and Red Spicy Chutney.

    Cabbage - grated, 1 bowl
    Cauliflower - grated, 1 bowl
    Capsicum - 1 small, chopped
    Salt - to taste

    Black pepper - ½ tsp
    Maida - 4 tbsp
    Corn Starch - 5-6 + 1 tbsp totally
    Oil - to deep fry
    Oil - 2 tbsp
    Green Chilli - 4 slit
    Capsicum - ½ small long cut
    Salt - to taste
    Black pepper - ½ tsp
    Sugar - ½ tsp
    Dark Soy sauce - 1 tsp
    Yellow Capsicum - ½ small, long cut
    Tomato - 1 small, without seeds long cut
    Vinegar / Lemon Juice - 1 tsp
    Chopped Coriander - 2 tbsp
    Water - 1 cup

    Here's a video with tips and tricks to make the best green chutney in your home kitchen.

    GREEN CHUTNEY

    Ingredients

    ¼ bunch mint
    ½ bunch coriander
    2 tbsps roasted chana dal (daalia)
    1 inch ginger
    2 garlic cloves
    2 green chillies
    Salt to taste
    ¼ tsp sugar
    1 lemon
    Veg seekh kebabs to serve

    Method

    1. Separate the mint leaves. Make sure that you don’t take the stems.
    2. Separate the coriander stems. Wash the mint and coriander thoroughly.
    3. Transfer mint and coriander leaves in a blender jar. Add roasted chana dal, ginger, garlic cloves, green chillies, salt, sugar.
    4. Squeeze lemon, add ¼ cup chilled water and grind to a fine paste.
    5. Serve with veg seekh kebabs.

    INGREDIENTS:
    For Rabri:
    * Milk (दूध) - 1/2 Litre
    * Sugar (चीनी) - 2 Tbsp

    For Sugar Syrup:
    * Sugar (चीनी) - 200 Grams/1 Cup
    * Water (पानी) - 1/2 Cup
    * Lemon juice (नींबू का रस) - 2-3 Drops
    * Cardamom (इलायची) - 2-3
    * Rosewater (गुलाब जल)

    For Ghevar:
    * Ghee (घी) - 4 Spoon
    * Ice cubes (बर्फ के टुकड़े) - 3-4 Cubes
    * Milk (दूध) - 1/2 Cup
    * All-purpose flour (मैदा) - 1 Cup/150-175 Gram
    * Gram flour ( बेसन) - 1 Tbsp
    * Lemon juice (नींबू का रस) - 1 Spoon
    * Dry fruits (सूखे मेवे)
    * Saffron (केसर)

    RECIPE:
    For Rabri/Malai, in a pan, put Milk for boiling. Put some Sugar & boil it till it turns thick. Then keep it for cooling down & keep the thick Milk in the fridge.
    For Sugar Syrup, in a pan, put Sugar & Water, when Sugar gets melted, put some Lemon Juice, Cardamom & Rose Water then make the Sugar Syrup of 1 string.
    For Ghevar, take a mixer jar, put Ghee, Ice Cubes & churn them. Then put some Milk & churn it again. Then put All-Purpose Flour in it gradually & churn it again & again by adding Chilled Water in it. Put some Lemon juice also & make a loose batter. Take out it in a steel bowl & place the steel bowl on an ice-cold water bowl. Fill the batter in a sauce bottle.
    Keep a vessel on the flame, put Refined Oil/Ghee in it for heating & put the batter in it gradually as shown in the video. Keep the fried Ghevar on a strainer, put Sugar Syrup & Rabri on the Ghevar then garnish it with chopped Pistachios, Saffron & Silver Leaf. In this way, without any mould, Halwai Style Ghevar will get ready very easily at home.

    For Pani Puri Pani ( पानी)

    Mint Leaves (पुदीने के पत्ते) – 1 cup
    Coriander Leaves (धनिये के पत्ते) – 1 cup
    Raw Mango (कच्चा आम) - 1 cup
    Green Chilli (हरी मिर्च) – 4-5
    Salt (नमक ) – 2 tsp
    Roasted Cumin Seeds (भुना हुआ जीरा बीज) – 1 tsp
    Black Salt (काला नमक) - 1 tsp
    Tamarind paste (इमली) – 1 tbsp
    Dry Mango Powder (सूखे आम पाउडर) – 2 tbsp
    Dry Ginger Powder (सौंठ पाउडर) - 2 tbsp
    Boondi (बूंदी) –1/2 Cup
    Water (पानी )- 1 ltr


    FOR Golgappe (गोलगप्पे)

    Wheat Flour (गेहूं का आटा) - 1 cup or 200 gm
    Sooji (सूजी) – 2 tbsp
    Salt (नमक ) - 1 tsp or as per taste
    Baking Powder (बेकिंग पाउडर) -
    Oil (तेल) – 500 ml Approx
    Water (पानी )- 150 ml

    Hey guys welcome back to my channel Devank' Food diary.. well today's recipe is a very unique recipe, a very interesting combination of Italian and Chinese Crispy Chili Macroni...

    INGREDIENTS REQUIRED:-
    * 2.5cups boiled macroni (cooked 70% only)
    *2-3 tbs rice flour
    *3-4 tbs Maida
    *2-3 tbs corn flour
    *salt as per taste
    *2 tsp black pepper powder
    *2tbs water for coating pasta
    *oil for deep frying
    *2-3tbs oil
    *1 green chili finely chopped
    *1 inch ginger finely chopped
    *4-5 garlic pods finely chopped
    *1/4 cup spring onion whites
    *1 small onion diced
    *1/4 capsicum diced (any colour)
    *2tbs soya sauce
    *2-3 tbs red chili sauce
    *1 tsp vinegar
    *1 tsp green chili sauce
    *2-3 tbs Tomato ketchup
    *1 tsp black pepper powder
    *1 ts salt
    *2-3tbs water
    *4tbs corn flour/maida slurry
    *1/4 cup spring onion greens
